Pineapple Coleslaw

When I was a child, my mother often served this salad with multicolored marshmallows sprinkled on top, much to my delight. The marshmallows added a touch of sweetness that really complemented this salad's tangy flavor. —Betty Follas, Morgan Hill, California

  • 3/4 cup mayonnaise
  • 2 tablespoons sugar
  • 2 tablespoons cider vinegar
  • 1 to 2 tablespoons 2% milk
  • 4 cups shredded cabbage
  • 3/4 cup pineapple tidbits
  • Paprika, optional


  • For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat.
  • Refrigerate until serving. If desired, sprinkle with paprika.

3/4 cup: 170 calories, 15g fat (2g saturated fat), 2mg cholesterol, 114mg sodium, 9g carbohydrate (6g sugars, 1g fiber), 1g protein.

    This was very popular with my granddaughters. A full head of cabbage makes about 6 cups of cole slaw so I made 1-1/2 times the recipe, and added 1 shredded carrot for color. The whole family raved and had seconds. I served it with instant pot pork ribs and steamed asparagus....great dinner! I'm definitely keeping this recipe as a family favorite.

    This was quick and delicious. I added shredded carrots for some color. It went well with Hawaiian chicken tacos.

    I add about 1/2 cup of shredded coconut and it's a nice touch! This is a lot of dressing for 4 cups of shredded cabbage, so you may want to reduce the amt. of dressing you make.

    I don't like coleslaw, but this I love. My husband loved it as well. Went together in just a few minutes and healthy as can be. This is on the favorites list.

    This is very similar to the way my late mother-in-law made her slaw. I use this recipe as the base and add celery seed and a teaspoon of yellow mustard to make the slaw taste almost just like hers.
