Ingredients

  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon coconut rum or rum extract
  • 2 cups miniature marshmallows
  • 1 cup sweetened shredded coconut, toasted
  • 1/2 cup finely chopped pistachios, toasted
  • 1 carton (8 ounces) frozen whipped topping, thawed

Directions

  1. In a large bowl, combine pineapple, pudding mix and rum. Add marshmallows, coconut and pistachios. Fold in whipped topping. Chill until serving.

If using prepared whipped topping, you can make the pina colada fluff a few days in advance. Just make sure you keep it in the fridge until it's time to serve. If using homemade whipped cream, be more cautious and make the fluff only a few hours in advance, or a day ahead at most. If you make it too far ahead, you may see the homemade whipped cream begin to deflate.
