Lemon Meringue Pie Cookies

Ingredients
- 3 large egg whites
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- 3/4 cup sugar
- LEMON CURD:
- 4 large eggs, room temperature
- 1-1/3 cups sugar
- 1/3 cup lemon juice
- 4 teaspoons grated lemon zest
- 3 tablespoons butter

I first made these 2 years ago for something different to add to our Christmas cookie repertoire. They have become my most requested recipe from both family, friends and co workers. Even people who don't like the named pie find them yummy! Well worth the effort, these are always the first to disappear on the tray. Thank you for passing on a winner recipe!
This is all my favorite parts of lemon meringue pie! It was definitely worth the effort. I am also gluten free and always looking for great dessert recipes and this is a new favorite of mine. I did make these bigger so I had less cookies but in general I tend to always make bigger cookies. I will definitely be making these again. My husband couldn't stop eating them!
These take some effort but boy are they worth it. The lemon curd is the perfect combination of sweet and tang. These are beautiful, delicious and they will not last long.
