Ingredients

10-1/2 ice cream sandwiches
1 jar (12 ounces) caramel ice cream topping
1 carton (12 ounces) frozen whipped topping, thawed
1/4 cup chocolate syrup
2 Symphony candy bars with almonds and toffee (4-1/4 ounces each), chopped
Maraschino cherries, optional

Directions

Arrange 9 ice cream sandwiches in a single layer in an ungreased 13x9-in. dish. Cut remaining ice cream sandwiches to fill the spaces in the dish. Spread with caramel and whipped toppings. Drizzle with chocolate syrup. Sprinkle with chopped candy bar. Cover and freeze for at least 45 minutes before serving. If desired, garnish with cherries.

Allow plenty of time to thaw the frozen whipped topping in advance. It's best to thaw it in the refrigerator overnight versus at room temperature. As for the ice cream sandwiches, be sure to keep them frozen until assembly.

Switch up the candy bars on top, if you desire. Caramel chocolate bars, toffee, chocolate chips or chopped nuts would also make good toppings if you want to add even more richness to your ice cream sandwich cake.
