Homemade Ice Cream Sandwiches Tips
How do you store homemade ice cream sandwiches?
Ice cream sandwiches can be wrapped individually in a double layer of plastic wrap and stored in the freezer for up to 3 months. If you’d like the sandwiches to look pretty, wrap each first in parchment or waxed paper, tie a piece of colorful twine around it, then place in a storage container to store in the freezer.
What’s the best way to assemble homemade ice cream sandwiches?
First, leave the ice cream out for about 20 minutes so it is soft enough to spread onto the cookies. Be sure not to overfill the sandwiches by putting on too much ice cream (tempting as it is!). Spread the ice cream to be about ½-1 inch from the edges of the cookie. Top with the second cookie, and gently press down so the ice cream comes to the edge of the sandwich. To avoid melting, wrap the ice cream sandwiches promptly as you make them, and slip them right into freezer. Chilling the cookies on a sheet tray before assembling the cookies will also help to prevent melting. Find more tips on
