Hoisin Chicken Pizza

Use leftover or rotisserie chicken if you have it on hand. During the summer months, it's worth taking the time to grill fresh chicken to add a smokier flavor to the pizza. —Jessie Apfel, Berkeley, California


  • 3/4 cup hoisin sauce, divided
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1-1/2 teaspoons minced fresh gingerroot
  • 1 garlic cloves, minced
  • 2 packages (6 ounces each) ready-to-use grilled chicken breast strips
  • 16 large fresh mushrooms, thinly sliced
  • 2 prebaked 12-inch pizza crusts
  • 4 green onions, chopped
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 4 cups shredded part-skim mozzarella cheese


  1. Preheat oven to 350°. In a small bowl, combine 1/2 cup hoisin, vinegar, oil, gingerroot and garlic. In a large bowl, combine chicken, mushrooms and remaining hoisin; toss to coat.
  2. Place crusts on 2 ungreased 12-in. pizza pans. Spread hoisin mixture over crusts. Top with chicken mixture, onions, water chestnuts and cheese.
  3. Bake until heated through and cheese is melted, 10-15 minutes.
