Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 1 cup butter
  • FILLING:
  • 4 large eggs
  • 2 cups sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup lime juice
  • 1/4 cup gin
  • 1 tablespoon grated lime zest
  • 1/2 teaspoon baking powder
  • GLAZE:
  • 1-1/2 cups confectioners' sugar
  • 2 tablespoons lime juice
  • 2 tablespoons gin
  • 1 teaspoon grated lime zest

Directions

  1. Preheat oven to 350°. Whisk flour, confectioners' sugar and salt; cut in butter until crumbly. Press onto bottom of a greased 15x10x1-in. baking pan. Bake until golden brown, about 10 minutes. Cool on a wire rack.
  2. For filling, whisk the 7 ingredients; spread over crust. Bake until filling is set, about 25 minutes. Cool completely in pan on a wire rack.
  3. For glaze, whisk all ingredients until smooth; spread evenly over cooled bars. Let glaze set before serving.
