French Onion Tortellini Soup
This soup is delicious, pretty and unbelievably fast to make. For a creamy variation, I sometimes substitute cream of mushroom soup for the French onion soup. If there are any leftovers, they taste even better the next day. - Marsha Farley, Bangor, Maine

The basic recipe seemed too bland for me so I browned the beef with a tbsp. cajun seasoning. As I didn’t have the French onion soup, I made the cream of mushroom version and added 6 oz. of sliced mushrooms I had on hand, sautéed in the same pan as the beef until browned. Because I love zucchini, I used more plus some onion powder for flavor. This soup would be good with many combinations of different vegetables, especially fresh from the garden during the summer months.
This looks right up our alley! Making it meatless.
My son liked it better than I did. The only change that I made was to substitute beef broth for the 3.5 cups of water.
Added a box of beef broth rather than water, used a small can of tomato paste rather than tomatoes, used a pkg of lipton onion soup mix rather than canned, so added a cup of water, added a tsp of black pepper, cooked everything but the pasta for 15 min, then with pasta for 10 min. Not bland. Yummy.
This soup was very good but I added beef bouillon for more flavor. After that it was perfect and everyone loves it.
I have to agree with previous posters. This soup was very bland. My 17 yr old son said it was awful and my husband said it wasn't bad but not good either. I won't be making this again. I made another Tortellini soup recipe that was much better with less ingredients.

Made as directed, but substituted canned green beans for frozen. I thought it was very bland and kept adding more and more seasonings until it had a bit more flavor. Will not make again.
I made this recipe just like the recipe said and it was bland.
