Easy Tortellini Spinach Soup

This is the easiest soup you will ever make—believe me! I always keep the ingredients on hand, so if I'm feeling under the weather or just plain busy I can throw together this comforting soup in a flash. —Angela Lively, Conroe, Texas

  • 16 frozen fully cooked Italian meatballs (about 1 pound)
  • 1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon pepper
  • 2 cartons (32 ounces each) chicken stock
  • 2 cups frozen cheese tortellini (about 8 ounces)
  • 3 ounces fresh baby spinach (about 4 cups)
  • Shredded Parmesan cheese, optional


  • Place the first 5 ingredients in a 6-qt. stockpot; bring to a boil. Reduce heat; simmer, covered, 10 minutes.
  • Return to a boil. Add tortellini; cook, uncovered, until meatballs are heated through and tortellini are tender, 3-5 minutes, stirring occasionally. Stir in spinach until wilted. Serve immediately. If desired, top with cheese.

Test Kitchen tips
  • Fully cooked Italian sausage, cut into half-moon slices, can be substituted for meatballs.
  • You can use frozen Italian turkey meatballs, but we haven’t found one that we love. We prefer the real deal.
  • One 9-oz. package refrigerated cheese tortellini may be substituted for 2 cups frozen tortellini.
  • Plan on serving the soup soon after adding the tortellini and spinach for the best texture.

      My husband said it was good soup, that’s a plus. I addd garlic seasoning, vegetable seasoning and more Italian seasoning.

      This is a great soup that I make all the time. I like to start mine with a mirepoix base and fresh garlic.. I know this is supposed to be "quick", but since I use mirepoix (and holy trinity) in so many things, I always have a supply in my freezer (self-chopped or store bought). I also like using Italian sausage like the test kitchen suggests.

      Wow, this was really easy to put together and delicious! I added extra meatballs and tortellini. I followed the recommendation and added garlic. Will definitely make again!

      Talk about a crowd pleaser! So easy to put together and a delicious meal. My two young kiddos were excited for the meatballs and tortellini and I was pleased they ate the spinach. A keeper!

      Made this recipe but substituted 1 can kidney beans and 1/2 can garbanzo beans in place of the Italian meatballs. I also substituted vegetable broth in place of the chicken broth. The soup was delicious!

      First time to make soup was tonight. We Loved it, with a few adds I will be making it again. It was ok cooking with the original seasonings but I wanted a bit more flavor. Added garlic powder, garlic

      My grandson loved this soup and asked me for the recipe. Increased seasonings a bit and added extra meatballs. A keeper and will make again.
