Cucumber and Red Onion Salad

This cucumber and onion salad is one of the first recipes I came up with myself. It's a great salad for picnics or potlucks. I always come home with an empty bowl! —Brynn Steckman, Westerville, Ohio

  • 2 small English cucumbers, thinly sliced
  • 1 cup thinly sliced red onion
  • 2 tablespoons white wine vinegar or rice vinegar
  • 1 tablespoon white vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sesame oil


  • Place all ingredients in a bowl; toss to combine. Refrigerate, covered, about 1 hour. Serve with a slotted spoon.

    My dad has been making this since I was a child (I'm 46 now), minus the sesame oil. He told me that he and my grandma made it together all the time when he was a kid, and wanted to carry on the tradition with me. I prefer the version without the sesame oil, but this tasted good, too.

    Made exactly as written and it was perfect. So cool and fresh tasting. Will definitely make often with the summer cucumbers we will have.

    This salad was prepared by me on 5/1/2019. I'd doubled the dressing ingredients, used 2 large cucumbers, red wine vinegar instead of white wine vinegar. I'd used regular vegetable oil as I'd had these ingredients on hand. This is a delicious and refreshing salad recipe!

    Excellent and easy! I made the recipe with no substitutions for a work pot luck, and I also came home with an empty bowl. I'll definitely do this again!

    Looks delicious! I love the idea of sesame oil. Did I miss something, Tracey? I don't see mayo OR sugar in the recipe.

    EXCELLENT!! I didn't have white vinegar so I used Balsamic. No harm and certainly no foul! Lol. Cut the mayo to 3/4th of cup & sugar to 1/3rd (as a commentor recommended). It's chilling now, but it's great. My family won't eat so it's more for me! YAY! :-)

    Read her description again, suefryray. It says, "I ALWAYS come home with an empty bowl!" It doesn't say NEVER. Sometimes people are too quick to be judgmental about the posted recipes and speak out before they know what they are talking about. Great salad Brynn Steckman :-)
