Ingredients

  • 2-1/2 cups chicken broth
  • 2 ounces cream cheese, cubed
  • 1/2 teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1 cup uncooked long grain rice
  • 1/4 cup minced fresh basil

Directions

  • In a saucepan, combine first six ingredients; bring to a boil. Stir with a whisk to blend.
  • Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Stir in basil.
