Colorful Spiral Pasta Salad

Tackle gatherings to go with a bright pasta salad. This tricolor toss-up with broccoli, tomatoes, olives and a hardworking dressing is the easiest one you could take. —Amanda Cable, Boxford, Massachusetts

  • 1 package (12 ounces) tricolor spiral pasta
  • 4 cups fresh broccoli florets
  • 1 pint grape tomatoes
  • 1 can (6 ounces) pitted ripe olives, drained
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1-1/2 cups Italian salad dressing with roasted red pepper and Parmesan


  • In a Dutch oven, cook pasta according to package directions, adding the broccoli during the last 2 minutes of cooking. Drain and rinse in cold water.
  • Transfer to a large bowl. Add the tomatoes, olives, salt and pepper. Drizzle with salad dressing; toss to coat. Chill until serving.

    I've used this basic recipe although I add a peeled, diced cucumber and we do not like Italian dressing (besides most of the premade ones have too much sugar for my DH who is diabetic) so we use my homemade version of Ranch or just plain old vinegar and oil dressing (which has always been my favorite anyway). Sometimes I substitute organic lettuce and leave out the pasta. It all depends on who's going to be eating it and if we're at a picnic or a church potluck. Most people prefer the lettuce, actually. Ah well - diversity!

    I've made a similar version of this salad. I add more crunchy veggies: carrots, red and green peppers, radishes and diced cucumber. Be sure to save some of the dressing till serving. The pasta soaks up the dressing and can be dry otherwise. Sprinkle with grated parmesan.

    I have been making this for years. Excellent salad. The only difference with mine is that I also add feta cheese and about a pound of shrimp steamed with Old Bay seasoning.

    We make this for special occasions too only I add cheese, cut up cubes of chicken,and salami plus shrimp. Makes an awesome meal all by itself with hot rolls or bread! Haven't had this lately and now I'm hungry for it!

    Always a hit! I leave out the broccoli and instead put purple onion and green peas. Will have to take another reader's suggestion and add cheese next time
