Ingredients

  • 2 cups all-purpose flour
  • 2 cups quick-cooking oats
  • Sugar substitute equivalent to 1-1/2 cups sugar
  • 2-3/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 large eggs
  • 1 cup orange juice
  • 1/3 cup canola oil
  • 2 large carrots, shredded
  • 2 medium apple, peeled and shredded
  • 1 cup raisins
  • 1 cup dried cranberries
  • 1 cup chopped walnuts

Directions

  1. In a large bowl, combine the first six ingredients. Whisk the eggs, orange juice and oil; stir into dry ingredients just until moistened. Fold in the remaining ingredients.
  2. Pour into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares.
