Beef & Veggie Sloppy Joes

I’m always looking for ways to serve my family healthy and delicious food, so I started experimenting with my favorite veggies and ground beef. Ingredients

  • 4 medium carrots, shredded
  • 1 medium yellow summer squash, shredded
  • 1 medium zucchini, shredded
  • 1 medium sweet red pepper, finely chopped
  • 2 medium tomatoes, seeded and chopped
  • 1 small red onion, finely chopped
  • 1/2 cup ketchup
  • 3 tablespoons minced fresh basil or 3 teaspoons dried basil
  • 3 tablespoons molasses
  • 2 tablespoons cider vinegar
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds lean ground beef (90% lean)
  • 10 whole wheat hamburger buns, split

Directions

  • In a 5- or 6-qt. slow cooker, combine the first 13 ingredients. In a large skillet, cook beef over medium heat 8-10 minutes or until no longer pink, breaking into crumbles. Drain; transfer beef to slow cooker. Stir to combine.
  • Cook, covered, on low 5-6 hours or until heated through and vegetables are tender. Using a slotted spoon, serve beef mixture on buns.
