Balsamic Cucumber Salad

Cucumber salad recipes are my absolute favorite! This fast, fresh salad is a winner at every get together. It's an easygoing, healthy side dish for kabobs, chicken or anything hot off the grill. —Blair Lonergan, Rochelle, Virginia

  • 1 large English cucumber, halved and sliced
  • 2 cups grape tomatoes, halved
  • 1 medium red onion, halved and thinly sliced
  • 1/2 cup balsamic vinaigrette
  • 3/4 cup crumbled reduced-fat feta cheese


  • In a large bowl, combine cucumber, tomatoes and onion. Add vinaigrette; toss to coat. Refrigerate, covered, until serving. Just before serving, stir in cheese. Serve with a slotted spoon.

    This is my favorite salad. I also add Kalamata olives and basil. I have it in the refrigerator right now.??

    This is a WONDERFUL recipe, easy and delicious. Plus, I added olives, as another commenter suggested, along with fresh thyme to make it even better! :)

    Simple refreshing salad, nice change without lettuce. I did add kalamata olives and made my own balsamic vinaigrette. So simple. Thank you Blair!

    This is a wonderful light summer salad, and perfect to go along with any summer main dish. My husband and I very much enjoyed this and will be making this again and again. It would be perfect to bring to a potluck too.

    Love this salad! It's quick and easy to prepare and oh so yummy. I make my own balsamic vinaigrette dressing very similar to the last reviewers recipe (using white balsamic vinegar).

    I loved this salad!!! To make it a true Greek salad, I added pitted Kalamata olives. I used chopped green onions instead of red because I prefer them. The recipe had no vinaigrette recipe--my recipe is 1/4 c. extra virgin olive oil, 2T balsamic vinegar, 1 T honey, 1 t. dijon mustard, salt & pepper to taste. I actually doubled the vinaigrette recipe so I would have extra to use for the next batch or for a salad.

    I peel most of the skin, cut lengthwise twice intoquarters, then 1/2 inch chunks. Much easier to gracefully eat than a slice. I also marinate in balsamic, a little water & fresh ground pepper for a day or two. Great for a healthy snack, too!

    I loved this easy fresh salad! I did add salt and pepper to taste and left out the feta cheese. If you like feta it would be delicious in it.
