Applesauce Cinnamon Bread

This whole wheat apple cinnamon bread recipe contains quite a bit of applesauce, which provides natural sweetness so you use less sugar. As a bonus, it also allows for a minimal amount of oil to be used. —Sherry Craw, Mattoon, Illinois

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1-1/2 teaspoons ground cinnamon, divided
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, room temperature
  • 1-1/4 cups unsweetened applesauce
  • 1/4 cup canola oil
  • 3 tablespoons 2% milk
  • 1/4 cup packed brown sugar

Directions

  • Preheat oven to 350°. In a large bowl, combine the flours, sugar, 1 teaspoon cinnamon, baking soda, salt, baking powder and nutmeg. In a small bowl, whisk the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened.
  • Transfer to a greased 9x5-in. loaf pan. Combine brown sugar and remaining 1/2 teaspoon cinnamon; sprinkle over the top.
  • Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes before removing from pan to a wire rack.
    Freeze option: Securely wrap cooled loaf in foil, then freeze. To use, thaw at room temperature.

  • Canola oil is high in monounsaturated fat, a type that helps to decrease blood cholesterol levels, and low in saturated fat, which can increase blood cholesterol. Olive oil would also taste great in this recipe and has the same healthy-fat properties.
  • Dark brown sugar contains more molasses than light or golden brown sugar. The types are generally interchangeable in recipes. But if you prefer a bolder flavor, choose dark brown sugar.
