Being landlocked in the Midwest, my kids always thought they disliked fish. This air-fryer salmon dish definitely changed their minds! Ingredients

  • 3 tablespoons butter
  • 3 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 medium lemon (juiced)
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 4 salmon fillets (4 ounces each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Preheat air fryer to 400°.
  2. In a small saucepan, melt butter over medium-high heat. Add maple syrup, mustard, lemon juice and minced garlic. Reduce heat and simmer until mixture thickens slightly, 2-3 minutes. Remove from heat; set aside.
  3. Drizzle olive oil over salmon; sprinkle with salt and pepper. Place fish in a single layer in air-fryer basket. Cook until fish is lightly browned and just beginning to flake easily with a fork, 5-7 minutes. Drizzle with sauce right before serving.
