When I make popovers, they rise so nice in the oven. When I take them out of the oven they soon shrink to nothing. Bake popovers for the time indicated in the recipe or until well browned and crusty. Also, it is important to leave the oven door shut during the first 20 minutes of baking. Opening the door can let in cool air, which can cause popovers to collapse. Also, using small eggs instead of large eggs to make the batter can cause them to fall.
