You can’t go wrong with homemade cookies; and when you add ice cream (especially homemade ice cream), they get even better. So skip the box in the back of your freezer and learn how to make ice cream sandwiches right at home.
How to Make Homemade Ice Cream Sandwiches
You can make ice cream sandwiches with just about any homemade cookie recipe and any flavor of ice cream. This being said, our Test Kitchen loves these It’s It copycat ice cream sandwiches. They have a perfect five-star ranking and deserve all the praise heaped upon them.
- 1/2 cup butter, softened
- 3/4 cup packed brown sugar
- 1/4 cup sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1-1/2 cups quick-cooking oats
- 3 cups vanilla ice cream, homemade or store-bought
- 1 bottle (7-1/4 ounces) chocolate hard-shell ice cream topping (optional)
- Large cookie scoop: You want the cookies to be identical in shape in size for easy sandwiching. A large cookie scoop will do the job.
- Ice cream scoop: Yep, a cookie scoop and an ice cream scoop are needed for this recipe. Invest in one of our editors’ favorite ice cream scoops to glide through even the most frozen pint.
- Offset spatula: Use this to evenly spread your favorite ice cream between the cookies.
Step 1: Make the Cookies
This recipe is easy-breezy. Start by making these cookies just as you would any other basic drop cookie recipe. Cream together the butter and sugars until pale and fluffy—about five minutes. Then add in the egg and vanilla.
Next, add in the dry ingredients (that’s flour, baking soda, cinnamon, baking powder and salt) and mix until just combined. Finally, stir in the oats and if desired any other mix-ins like chocolate chips, other baking chips, nuts or raisins.
Portion out the cookies using a large cookie scoop and bake at 350ºF for 11 to 13 minutes. The edges should be golden brown. Once fully baked, cool on the pan for a few minutes before moving to a wire rack to cool completely.
Editor’s Tip: Identically shaped cookies are a must for ice cream sandwiches. Using a cookie scoop is the first step. When the cookies come out of the oven, use a large biscuit cutter to make cookies perfectly round.
Step 2: Soften the Ice Cream and Spread
While the cookies are cooling, take your ice cream out of the freezer. You’ll want your pint to be softened up a bit before assembling the cookies. Feel free to use your favorite ice cream from the store or try a homemade ice cream (or froyo or custard or gelato). A 10- to 15-minute stay on the countertop should soften up the ice cream just enough.
Once soft, scoop out 1/3-cup portions of ice cream and spread evenly over half of the cookies. An offset spatula will make this job easy.
Step 3: Sandwich and Chill
After spreading an even layer of ice cream on the cookies, sandwich them together. Then pop the pan of sammies into the freezer for at least 30 minutes. They should be firm before you move onto the next step.
Step 4: Finish with the Fun Stuff
Now for the fun part (OK—it’s all the fun part with ice cream sandwiches): adding the extras. Use whatever ice cream toppings you like here. You can roll the edges in chocolate chips, sprinkles, chopped nuts or candy. You can even coat the sandwich in Magic Shell (or homemade Magic Shell if you want to go 100% from-scratch).

How do you store homemade ice cream sandwiches?
After adding extras like sprinkles and chocolate, you can eat the sandwiches right away. If you want to save some for later, wrap individual sandwiches tightly in plastic wrap, then store the individual sammies in a zip-top bag or airtight container.
They’ll keep for up to three months in the freezer.
Can you use other types of cookies?
You sure can! You can make ice cream sandwiches with almost any homemade cookie. Simple drop cookies and cutout cookies work best. If you’re short on time, you can even use store-bought cookies.
